It’s a feat that they hope to accomplish through their dedication to precision and perfection. “The tedious work is our strength,” says chef and owner Yuu Shimano. Restaurant Yuu is an 18-seat omakase counter that serves a seasonal 20-course tasting menu. As an omnivore who loves meat and whose husband leans vegetarian, I often rely on TikTok for recipe inspiration, so the idea of substituting animal protein with beans wasn’t new or shocking. But reel after reel, all I saw were recipes extolling the modest butter bean.
