Red Paper Clip co-chef-owner and XLB agnolotti mastermind Kevin Chen reimagines a Piedmont pasta ripiena as a Shanghai soup dumpling, a.k.a. xiao long bao. He says the dish was inspired by the Black Truffle Explosion dumpling at Alinea.
